The estate

No estate owns more of Chablis's grand cru slope than Domaine William Fèvre — nearly sixteen hectares across Les Clos, Bougros, Valmur, Vaudésir, and Les Preuses, assembled by its founder from 1959 onward. Since 1998 the domaine has been run with near-clinical exactness: old vines, harvest by hand, and an oak regime so restrained that new barrels are banished entirely. The result is Chablis at its most crystalline — wines of oyster-shell salinity and cold stone tension, with Les Clos and the Côte Bouguerots parcel of Bougros standing among the appellation's definitive bottles.
