Tasting notes
Stephen Tanzer · Vinous · 96
(-) Bright golden-yellow. Wonderfully complex, rot-ennobled nose melds pineapple, yellow peach, cherry-almond, honey and oak spices. Superrich, lush and deep, conveying a powerful impression of botrytis character in its concentration of sweetness and fresh acidity. Wonderfully chewy, tactile wine with a very sweet, gripping, highly perfumed aftertaste. This is very Yquem-like in 2007, perhaps even thicker than its neighbor but not quite as fine. A great vintage in the making for this Sauternes.

The 2007 Château de Fargues has a floral bouquet with clear honey, quince and saffron scents, initially timid yet blossoming with aeration. The palate is very well balanced, quite viscous and lightly spiced with decent acidity and hints of stem ginger towards the finish. Superb. Tasted at the 2007 horizontal in Sauternes.
